Mediterranean Style Baked Halibut with Capers, Olives, Tomatoes & Herbs

Ingredients

  • 4 portions - Sealove Wild Halibut

  • ½ cup - Extra Virgin Olive Oil

  • 1 cup - Sliced Yellow Sweet Onions

  • 2 cup - Assorted Baby Tomatoes with a light cut on each one to prevent bursting

  • ¼ cup - Capers

  • ½cup - Pitted Kalamata Olives 

  • ½ cup - White wine of choice

  • ¼ cup - Assorted Fresh Herbs IE: Parsley, Basil, Chives, Thyme

  • Salt & pepper to taste


Instructions

  1. Preheat your oven to 400° Fahrenheit.

  2. Preheat a medium-size sauté pan on medium heat for 30 seconds. Add the olive oil and onions, continue to sauté them for 2 mins, stirring occasionally. Add the capers, tomatoes, olives & white wine.

  3. Continue to sauté for an additional 2 mins, stirring occasionally.

  4. Pour this mixture into a baking vessel of choice, place on top the four pieces of Sealove Wild Halibut that have been lightly brushed with olive oil and lightly seasoned with salt & black pepper. Please note that the tomato mixture will have sufficient salt from the capers and olives.

  5. Bake in the oven on the middle shelf for 15 min.

  6. Remove from oven and serve with a choice of compliments, i.e., pasta, potatoes, rice, beans, etc.
